• potato salad 
• kiriboshi daikon (dried radish & carrots cooked in sweet sauce)
• unihana (okara, carrots, devil's tongue, fried beancurd cooked in sweet sauce)
• wasabi shiitake mushroom from Matsumoto wasabi farm
• left over sawara fish from last night 
• white rice

Easy and Sweet Delicious Semi-Dried Tomatoes Recipe





Please use very red cherry tomatoes.

 

Ingredients

*cherry mini tomatoes 20
*Italian herbs 1 table spoon
*Olive oil 2 table spoons

Instructions

1. Cut the tomatoes into half. Place an aluminium foil on a tray.

2. Place tomatoes on the aluminium foil, apart from each other.

3. Marinate tomatoes with the herbs and olive oil on the tray.  

4. Toast them for about for 40 mins to 1 hour with low temperature.


Chicken foccacia: Easy Parmesan Herb Chicken Recipe



Well, it looks like lunch.
But no. It was my dinner last night.


*Chicken foccacia
*Baked croquettes
*Semi-dried tomatos
*Carrot and fruit juice





My mum bakes delicious bread at home.



I have worked in both Japanese and Australian bakeries before,
but my mun's bread has always been the best.

I want to be able to bake bread like my mum someday,
but till then, I need to buy some cheap bread from supermarket... :(


Recently, I've been buying this mediterranean foccacia bread from fair price finest
(Singaporean supermarket).

It's got bits of dried tomatoes inside and  yes, it is quite good for the price.
Yes very fair price...


Anyway, so what I did was.. I toasted the mediterranean foccacias in my new toaster,
made parmesan herb chicken patties and semi-dried tomatoes.
Stuffed them in the toasted foccacia bread with sliced cucumbers, lettuce and mayonaise.

Cheap bread turned into a delicious sandwich! 


Parmesan Herb Chicken Pattie Recipe



Ingredients

*Minced chicken 200g
*Dried Italian herbs 1 table spoon
*Parmesan Cheese 1 table spoon
*Breadcrumbs 1 table spoon


Instructions
1. Put all the ingredients in a bowl and mix them well. Then make round, flat shapes.
2. Heat up a pan with some olive oil and cook the patties.

Morimori Japanese style breakfast

Salmon from the Hokkaido Food Fair at Isetan few weeks back.

I ate it with shaved radish & soya sauce
So yummy!

I was very hungry this morning and was craving for Japanese food!
My housemate was surprised to see me grilling the salmon from the morning...
"Are you eating all this for breakfast?"
Well, I have to agree that it was a bit too much for breakfst :p



*"Morimori" is a sound/word we use in Japanese when we think something is "a lot"*

Japanese style breakfast

Today's breakfast was Japanese style breakfast!



*Grilled salmon
*Dashimaki tamago (Japanese style rolled egg)
*pickled radish
*cabbage & carrots miso soup
*white rice

Oh yes, white rice!
I recently switched from a cheap rice brand to Akitakomachi, Japanese rice.
Now, the rice tastes so much better now! I can eat rice just by itself, without any sauce or side dishes. Each piece of rice is soft, round and sweet.





I like western style breakfast but I guess I am still Japanese, I love Japanese style the best!

This morning, the moment I woke up, I had an urge for Japanese style breakfast.
I had to eat it!
So I walked to the kitchen and cooked the salmon, egg, and miso soup.
I had already pickled radish few days ago and they were still in the fridge ready to serve!
I like to make a lot of pickles and save them in the fridge so that whenever I'm hungry, I can just take them out of the fridge and eat them!

Radish pickles aer very yummy.
The recipe is inspired by my favourite korean restaurant in melb.
You can pickle half of radish with about 4 table spoons of suger, 1 table spoon of vinegar, and some wasabi!


The egg was soft and sweet and yummy!

Today I have a non-stick square pan specially for dashimaki tamago.
So here, the egg looks nicer than the one in the recipe.
If you want to make a really good looking egg, please use a non-stick,  square shaped pan!




Today's breakfast was a little bit plain.
 It could have been even better to add spinach & tofu dish to today's breakfast!
(I didn't have stock in my fridge)
It was still very yummy though!

Delicious "Breakfast stack" recipe

My very first attempt in making my favourite Melbourne breakfast !!




Today's brunch

"Breakfast stack"



My most favourite breakfast is a dish called "breakfast stack" in one of the cafes in Melb.
I used to eat this often when I lived in Melbourne.
But since I moved to Singapore last year, I hadn't been able to eat it for a long time.
I missed this dish so much.

So, when I went back to Melbourne for a holiday about a week ago, I thought I must eat this again.
And I did! It was as awesome as last time I ate it.


After flying back to Singapore, I missed this dish again straight away.
Then I thought,

hey why don't I try making it myself at home?




Well, the display of the dish is not as good as the real "breakfast stack" as I failed to make them stack nicely, and also my very fist attempt in making poached egg failed.


But hey!

It tasted as delicious as the one I ate in Melbourne!:D
I think, the secret is the Halloumi cheese and the tomato sauce around the stack!

I stack a potato patty, few slices of grilled Halloumi cheese, chicken& cheese sausages, grilled tomatoes and a poached egg.



For the tomato sauce, I used tomatoes, onions, Italian herbs, Lemon & Garlic marinate sauce (from Marks&Spencer) and tomato ketchup.



It takes time- but it's delicious and cost saving if you cook it at home!
Also you can eat it anytime & anywhere you want! - Well, what I meant by "Anywhere" is countries like whether you are in Australia or Singapore or in Japan, you can have this delicious breakfast!)





Recipe


Ingredients

*potatoes 2
*sweet honey mini tomatoes 5 or so
*your choice of sausages/bacons 2
*Halloumi cheese 2 slices
*egg 1
*Butter/olive oil 1 tea spoon
*Italian herbs- just a sprinkle

Ingredients for the sauce
*sweet honey mini tomatoes 5 or so
*Onion1/8
*Lemon and Gralic marinate sauce 3 table spoons
*Tomato ketchup 4 table spoons
*Italian herbs - just a sprinkle


Instructions

1. Peel the potato skin, cut them into half, boil them till they become soft enough to mash.
2. Meanwhile, cut the tomatoes into half (Cut all the tomatoes, both for the stack and the sauce together, so that it will be easier later on).
3. Once the potatoes are boiled, take them out of the water and mash! Once mashed, make a patty shape.
4. Heat up a pan with either butter or olive oil. place the patty and half of the chopped tomatoes. Sprinkle the herbs on top of the tomatoes, leave them for a while then, flip them over before they get burnt. Once nicely cooked, take them out of the pan, and start stacking. A potato patty, then tomatoes.
5. On the same pan, cook the cheese and sausages. (Cheese cooks faster than sausages)
Once done, stack them on top of the tomatoes.
6. Poaching the egg! - I'm still not sure how to do it well, but boil the water in a pot, either gently crack the egg into the water, or crack the egg on a bowl first and slowly smoothly slip the egg into the water.
Once done, place the egg on top of the breakfast stack!


7. Now, the sauce! sauce is easy.
Mince the onion. put all the ingredients in a pan. bring it to boil.

Long time no fish!

We went to a Japanese supermarket in South Yarra and bought Saba fish!


I love Saba!
I don't get to eat fish much in Melbourne because they are expensive.
I was very happy to eat Saba today.

Chicken and Radish Nimono



Today's breakfast

Menu

*Chicken and Radish Nimono
*Cabbage miso soup
*White rice
*Blue berry jam yoghurt
*Mandrin Orange juice!




Chicken and Radish Nimono Recipe






Ingredients

*Radish 5cm
*Chicken thigh 200g
*Water (with 1 tea spoon of rice or, water you used to wash rice)
*Water 3 cups
*Japanese soup stock 2 tea spoons
*Soya sauce 3 table spoons
*Mirin 3 table spoons



Instructions

1. Cut the radish into eatable sizes (1cm thick is good). Then, make small incisions around the edges of the radish so that the radish soaks up the sauce when we cook it.

2. Boil the radish with the rice water till the radish becomes soft.

3. Meanwhile, cut the chicken into eatable sizes. Put the chicken and the rest of the ingredients into a pot, cook the for 10 mins (mid fire)with a lid on. Take out scum.

4. Once the radish is cooked, Get rid of the rice water. Add the radish to the pot with the chicken. Cook for another 5 mins or so.

Back in Melbourne. Luxurious breakie?


Few days after I came back to Melbourne,
our fridge stopped working properly.


A small fan inside of the freezer stopped running.

Everything in the freezer started to melt...
so, we had to cook everything.
Chicken, fish, pork...
all the meat we kept in our freezer.

So our breakfast became rather luxurious!



*Rafutei (Okinawan pork belly dish)
*Grilled Hokke fish
*Mushroom soup
*Boiled cabbage with shaved bonitos
*White rice

We went to see a new fridge,
but it turned out that
the fan in the freezer was just frozen and could not move.

After breaking out all the ice,
the freezer started working again!

    Sardine egg rolls



    Japanese style rolled eggs with the sardine

    They are really really yummy!!

    It's a good idea to make this egg rolls
    on the next day you cooked Sardine with ginger and sweet sauce.




    Ingredients





    Instructions

    1. Put eggs, milk and soup stock in a bowl, mix them well

    2. heat up a non-stick pan with some oil, pour 1/3 of the mixed egg in, spread it evenly.

    3. place some sardine on top of the spreaded egg, once the egg is cooked, roll it over, pour another 1/3 of the mixed egg in, place the sardine... repreat the same process.

    Hamburg steak toast

    Ingredients


    *pipe loaf (from baker's delight) where I
    *cucumber-1/2
    *tomatoes-1/2
    *mayonaise- some
    *hamburg steak (from last night's dinner)
    *tasty cheese (I use some Mexican cheese)-some
    *tomato sauce-some



    Instructions for veggie sandwich

    1. toast the sliced pipe loaf

    2. put viegges and mayo in between the loaf

    1. spread tomato sauce on the toasted pipe loaf

    2. place some hamburg steaks and cheese on top

    3. bake it for few minutes in the oven

    Japanese style sweet egg breakfast

    Today's breakfast





    I had some time in the morning so I cooked full breakfast today.


    Good breakfast gives you a lot of energy for a day.


    It took me less than 30mins to get everything ready.




    Menu

    *BBQ pork (this was cooked by my bf)

    *Pickled cucumber



    *Pickled radish




    *Kimchi (from Oriental Spoon- their kimchi is the best)


    *Japanese style sweet egg (dashimaki tamago)



    *tofu and onion miso soup

    *white rice





    ***Pickles are easy to make and are good for breakfast.
    You can cook them a night before and eat it on the next day :)
    You can also preserve them for a long time. It's a good side dish for a busy morning.




    Japanese style sweet egg recipe






    Ingredients


    *3 eggs
    *milk 2 table spoons
    *Japanese fish soup stock 2 tea spoons
    *suger 2 tea spoon
    *soya sauce 1 tea spoon


    Instructions


    1. put all the ingredients into a bowl. stir well

    2. heat up a non-stick pan (preferably square shaped one) with some oil (mid-low fire)

    3. pour 1/3 of the mixed ingredients to the pan. make sure you spread it evenly.

    4. once cooked, fold it 3 times.

    5. pour some more oil into the area of the pan where there is no eggs.

    6. pour another 1/3 of the mixed ingredients into the pan, to the area where you just spread some oil. once cooked, fold it 3 times


    Continue this process and you can create a nice layers of eggs.

    Potato salad recipe

    Today's brunch Y

    *hamburger steak sandwich
    *potato salad
    *fresh tomatoes
    *milo Y



    Potato salad recipe serves 4


    Ingredients

    *Potatoes 3

    *onion (small)1

    *cucumber 1/2

    *mayonase 3 table spoons

    *soya sauce 2 tea spoons

    *a pinch of salt

    *a bit of papper



    Instructions

    1. cut the cucumber into thin slices, onions into small pieces. Put them into a bowl with salted water (1 tea spoon sault + 1 cup of water) leave them for a while.

    2. peel the potato skin, cut each of them roughly into 4. Boil them till the potatoes get soft enough to smash. (don't wait too long because potatoes might get squashed while they'are still in the boiling water). 3.


    3. take the potatoes out of the water and smash them in a bowl. take the cucumbers and the onions out of the water and mix them with the smashed potatoes.


    4. add all the sauce ingredients, leave them in the fridge untill the salad becomes cold.
