Taco Rice Lunch & Chicken Karaage dinner

 

*Sunday Lunch*
 


Taco Rice
 
Ingredients: Minced beef
Taco chilli powder
Salsa sauce
Cheese
Lettuce
Tomatoes
Onions
Egg
 
 
Instructions: 1. Heat up a pan with minced beef. Stir fry it with taco chilli powder.
(I found beef quite oily so I usually don't put any oil at all)
2. Cook sunny side egg.
3. Cut tomatoes, onions and lettuce in eatable sizes
4. Serve miced beef on top of rice and a bed of lettus, tomatoes and onions.
Place the egg on top. Eat with salsa sauce and some cheese.

*Spinach egg rolls from the day before yesterday
*Salad
*Rice
 
 
 

 
Ingredients: Chicken thigh 200g
 Soya sauce 4 table spoons
Mirin 2 table spoons
Shaved Garlic or ginger 1 tea spoon
(ginger is better if you are eating this in school or at work)
Potato starch half a cup
 
Instructions:
Marinate the chicken in soya sauce, mirin and garlic or ginger and leave it for a while.
Coat the marinated chicken with potato starch and deep fry them with good quality oil.

6 kinds of veggetable in one meal: Japanese BBQ don Dinner


Dinner from a day before



*BBQed pork and veggies
*Pickled radish
*Grilled corns
*Rice


Thin sliced pork, carrots, cabbage, pumpkins, onions, shiitake mushrooms...
Marinate them with with Japanese BBQ sauce
and stir fried them with less than 1 tea spoon of sesame oil.
(Pumpkins must be microwaved for 1 mins before you stir fry them)


Grilled butter corns and pickled radish

It was my first time buying fresh corns in Singapore
but these ones were not as sweet as ones in Australia or in Japan... :(

All together 6 kinds of veggies in one meal!


I ate alot and became really full but most of the things I ate were veggies! So I felt good! :)

Today's Dinner : Hamburger Steaks Recipe


Today's Dinner


*Hamburger Steak
*Veggie Roasts
*Rice



Recipe for Hamburger steaks serve 5

Ingredients: 
Minced beef 300g
Minced pork 250g
Dry hurbs 1 table spoon
Egg 1
Onion 1/4
Butter 1 tea spoon


Instructions:
1. Mince the onion into tiny tiny bits. Heat up a pan with the butter, fry the onion till it gets soft. Then leave it to cool it down.
2. Put all the ingredients including the fried onion in a bowl. Mix them very well with hands and make round shapes.
3. Heat up a pan again, and cook the hamburger steaks. Once both sides turned into nice brown colours, grill them in a toaster to cook fully.
*When you use a toaster, unnecessary oil comes out of the steaks and makes them tastier.*


You can eat it with your favourite sauce.
I mixed tomato sauce, fruit&vegetable sauce &mayonaise and put it on top!

Easy & Tasty Korean Style Stir fried Chicken Recipe





I made the pork version of this few months ago.
This time, we had some chicken thigh in the fridge, so I made the chicken version.
I also put egg plants, cabbage and onions this time.

Personally, I found chicken softer and tastier!

Ingredients

*Chicken thigh 350g
*Cabbage 1/4 or 1/6 (depending on the size of the cabbage you are using)
*Eggplant 1/2 or 1 (again, depending on the size of the eggplant)
*Onion1
*Minced garlic 2 tea spoons
*Korean BBQ sauce 5 table spoons
*Mirin 2 table spoons



Instructions


1. Cut the chicken into eatable sizes, onion & eggplant into thin slices, cabbage into small pieces.

2. Heat up a pan with some oil, stir fry the ingredients starting off from garlic, then chicken, rest of the veggies at the end.

3. Add the BBQ sauce and mirin. Stir well.

We went to a Japanese supermarket in South Yarra and bought Saba fish!


I love Saba!
I don't get to eat fish much in Melbourne because they are expensive.
I was very happy to eat Saba today.

Japanese Style Hamburger Steak Recipe 2


Yesterday's dinner


Menu
*Japanese style Hamburger steak in soup
*Cabbage miso soup
*White rice








Japanese Style Hamburger Steak in Soup recipe


Ingredients

*Minced pork 250g
*Minced beef 250g
*Salts&Pepper some
*bread crumb 3 table spoons
*Egg 1
*Milk 1 table spoon


Soup

*Water 2 cups
*Japanese soup stock 2 tea spoons
*Soya sauce 4 table spoons
*Mirin 3 table spoons
*Pea some (Tear the edge off)
*Radish 3 cm (Shave it)

Instructions
1. Mix all the ingredients for hamburger steaks well. Form round shapes.
2. Heat up a pan with some oil, cook the hamburger steaks.
3. Meanwhile, put all the soup ingredients in a pot except for the radish. Cook it for few minutes. Pour the soup into the pan with hamburger steaks. Place a lid and cook them for about 3 mins.



Serving instructions

*Place hamburger steaks on a plate, put shaved radish on top, pour the soup.*

Ingredients
*Chicken Thigh 200g
*Soya sauce 2 table spoons
*Marmalade jam 2 table spoons


Instructions
1. Cut the chicken into eatable sizes, marinate it with soya sauce and marmalade jam. Leave them for 5 to 10 mins.

2. Cook them in a pan/pot.



You might find it weird to marinate chicken with marmalade jam and soya sauce.
But trust me, marmalade jam goes very well with soya sauce!

*Teriyaki chicken
*Egg plants miso soup
*Tofu & Radish salad
*Devil's tongue (Konnyaku) nimono
*White rice







Recipe for Teriyaki chicken

Serves 2





Ingredients

*Chicken thigh 200g
*Soya sauce 4 table spoons
*Mirin 3 table spoons
*Minced garlic 1 tea spoon


Instructions

1. Cut the chicken into small pieces, put all the ingredients into a bowl. Marinate the chicken for 5 to 10 mins.
(Alternatively, you can marinate the chicken in the morning and cook it for lunch or dinner)

2. Heat up a pan, cook the chicken together with the sauce.

Easy and tasty Korean style stir fried pork recipe


Ingredients


  • Diced pork 300g

  • Bean sprouts 200g

  • Egg plant 1/2

  • Onion 1

  • Garlic 2 pieces

  • Korean BBQ sauce 5 table spoons

  • Mirin 2 table spoons


Instructions



  1. Pre boil the bean sprouts. cut the onion and eggplants into thin slices, garlic into small pieces.

  2. Heat up a pan with some oil, stir fry the ingredients starting off from garlic, then pork, eggplants, onion and bean sprouts at the end.

  3. Add the BBQ sauce and mirin. Stir well.

Japanese ginger pork recipe

  • Easy & tasty Japanese ginger pork

My housemate's bf's mom (complicated?) gave us lotus roots the other day.

I love lotus roots

I've been craving for lotus roots but hadn't seen any in Australia before.

I wonder where she got them from...





Anyway,my mom always makes meat balls with minced lotus roots


and I love them sooo much


As soon as I saw lotus roots, I decided to make the meat balls

  • Thinly sliced pork 300g

  • Shaved ginger 1 tea spoon

  • Soya sauce 2 table spoons

  • Mirin 1 table spoon

  • Sake 1 table spoon

Shio dare chicken recipe

  • Shio dare chicken (chicken with sweet&sour salt onion sauce)
  • Niku jyaga (Japanese traditional dish)

Ingredients

  • chicken thigh fillets 300g
(Sauce ingredients)
  • Onion (large) 1
  • Chicken powder 1 tea spoon
  • Sesame oil 2 table spoon
  • Salt 1 tea spoon
  • Pepper some
  • Vinegar 2 table spoons

Instructions
  1. cut the chicken thigh fillets into eatable sizes. Cook them in a pan with some oil.
  2. Put all the sauce ingredients in a bowl and mix them well. pour them on top of the chicken.
  3. Close the lid and wait for about 20 seconds till the onion becomes soft.

Easy&Tasty Croquettes recipe

Menu

  • Croquettes
  • Mayo prawn tempura

  • Seaweed, shiitake and egg soup

Croquettes have been my favourite food since I was small

In Japan, croquettes are very cheap (100yen or less per one)
so we tend to buy them rather than making them at home.
However, we can always make croquettes easily.
They are cheap to make as well.

So why not try making ones at home tonight



Easy&Tasty Croquettes Recipe


Ingredients

  • Medium sized Potatoes 3
  • Bread crumbs 1/2 to 1 cup
  • Flour 1/2 cup to 1 cup
  • Egg 1
  • Salts&pepper


Instructions

  1. Wash the potatoes and cut them into 4. Place them in a pot with boiling water. Put some salts. (You don't have to take out the potato skin at this stage. once you boil the potatoes with salts, skin will just peel off by themselves.)

  2. Once potatoes become soft, take them out of the water and mash them. Put some salts&pappers and leave the mashed potatoes in a bowl, let them cool down

  3. Once they are cold enough to touch, make flat round shapes.
    Then, put flours all over the potatoes-> dip them into stired egg-> place bread crumbs all over the potatoes.

  4. Deep fry them slowly with low temperature.

Tomato stew with hamburg steaks/トマト煮込みハンバーグ recipe

Menu


  • Tomato stew with hamburg steaks
  • Pumpkin soup
  • Steamed egg with shiitake mushrooms
  • White rice



Recipe for Tomato stew with hamburger steaks

Ingredients for the tomato stew

  • Canned tomato sauce (I always use the one with herbs)
  • Water 1 cup
  • Veggies (1 potato,1 carrot, 1/2 onion)
  • Japanese fruit and vegetable sauce 2 table spoons
  • Konsome 1 cube
  • Fresh cream 1/2
  • Cheese 3 table spoons


Ingredients for the hamburg steaks

  • Minced Veal 250g
  • Bread crumbs 1/2 cup
  • egg 1


Instructions


  1. Cut the veggies into eatable sizes. heat up a pot with some butter (1 table spoon) and cook all the veggies.
  2. Pour the water, canned tomato sauce, fruit and vegetable suace and konsome into the pot. Bring to the boil, take out scums. Close the lid, cook for about 10 mins so that veggies become soft.
  3. Meanwhile, cook the hamburg steaks. Place all the ingredients for the hamburg steak in a bowl and mix them very very well. Then, make the round, flat hamburg steak shapes.
  4. Heat up a pan and place the hamburg steaks. (no oil required for a non-stick pan but if you are using an ordinary pan, put some oil)
  5. Once one side is cooked, flip them over. Hamburg steaks do not have to be fully cooked because we'll cook them in a stew later.
  6. Once hamburg steaks got nice brown colours, place them into the pot with the soup.
    Cook for another 10 mins. just before you turn off the fire, pour the fresh cream and the cheese. Stir a bit. Serve while hot!

Sardines with ginger and sweet sauce recipe

Menu
  • Sardine with ginger and sweet sauce
  • Japanese sweet pumpkins
  • Japanese curry
  • Udon
  • Japanese cucumber pickles
  • White rice






I bought some cheap canned sardine from ALDI the other day

As few sardine pieces were squwashed in a small can,
they were already a bit out of shape even before I started cooking them.


Therefore, these sardines in the picture look a bit messy.

However, they did taste great!




Sadine with ginger and sweet sauce recipe



Ingredients

  • 6 Sardine pieces (you can either buy a can of sardines or buy the fresh sardine and take out heads, borns etc...)
  • shaved ginger 1 table spoon
  • soya sauce 2 table spoon
  • Mirin 1 table spoon
  • Japanese cooking Sake 1 table spoon

Instructions

  1. Put everything in a pot. Cook them slowly till the sardines absorb all the sauce.

Shiso hamburger steaks recipe





Tuesday's dinner





Menu

  • Shiso hamburger steaks
  • Wakame seaweed Udon noodles
  • Shiso minced cutlets (recipe)
  • Pickles






    I bought shiso on last thursday from Victoria street→

    I made the Shiso hamburger steaks on the next day

and kept them in the freezer

I did this because I was scared that shiso would be spoilt

by the time I come back from Blargowrie.




By the way, my housemates are finally back!!

Shiso Hamburger steak recipe







Ingredients

  • Minced pork 200g
  • Shiso leaves 6-10
  • Bread crumbs 1/2 cup
  • egg 1/2
  • salts
  • papper






Instructions

  1. Put all the ingredients in a bowl, mix them well with your hands.
  2. Make round shapes.
  3. Cook them in a pan with some oil. (strong fire-> once the clour became brown, flip them over-> change to low fire and close the lid)





Onion sauce recipe


Ingredients

  • Onion 1/4
  • Soya sauce 4 table spoons
  • Mirin 2 table spoons
  • Sake 1 table spoon



Instructions

  1. Shave the onions
  2. Add all the ingredients in a small pot. Cook them for few minutes.

Shiso Cutlets しそメンチカツrecipe

Menu

  • Shiso menchi katsu -Minced cutlets with Shiso (labiate) leaves
  • Baked potatoes with tomatoes, mayonaise and cheese
  • Stir fried Chinese cabbage with garlic and mushrooms
  • White rice



















I didn't like mushrooms when I was in Japan.


But I love them now











Shiso Cutlets

My Japanese friend took me to one of the Vietnamese shops on Victoria street yesterday.

They sell Shiso leaves! I was so excited

My friend said I can make Shiso drink if I get a lot of Shiso.






But yesterday I just decided to get few.
Just to try.

Only $0.80 for a bunch



Shiso Cutlets Recipe


Ingredients

  • Minced pork 350g
  • Onion 1/2
  • Shiso leaves 6-10 pieces
  • Egg 1
  • Bread crumbs 1 cup
  • Flour 1 cup



Instructions

  1. Take the Shiso leaves out of the stem. Wash the leaves.

  2. cut the onion into really tiny pieces, mix the onions and meat well (better to use your hands)

  3. make round shapes, in between the meat, place 1-2 Shiso leaves.

  4. prepare 3 bowls, put the flour, the egg (stired), the bread crumbs in each bowls. one by one, put flours around the round shaped meat, then dip into the stired egg, then put bread crumbs.

  5. deep fry in the oil. they are cooked once they rise up from the bottom of the pot and float on the oil.



Nice to eat with Yuzu dressing (right)or Bull-dog sauce (left)
