Taco Rice Lunch & Chicken Karaage dinner

 

*Sunday Lunch*
 


Taco Rice
 
Ingredients: Minced beef
Taco chilli powder
Salsa sauce
Cheese
Lettuce
Tomatoes
Onions
Egg
 
 
Instructions: 1. Heat up a pan with minced beef. Stir fry it with taco chilli powder.
(I found beef quite oily so I usually don't put any oil at all)
2. Cook sunny side egg.
3. Cut tomatoes, onions and lettuce in eatable sizes
4. Serve miced beef on top of rice and a bed of lettus, tomatoes and onions.
Place the egg on top. Eat with salsa sauce and some cheese.

*Chicken Karaage
*Spinach egg rolls from the day before yesterday
*Salad
*Rice
 
 
 

 
Ingredients: Chicken thigh 200g
 Soya sauce 4 table spoons
Mirin 2 table spoons
Shaved Garlic or ginger 1 tea spoon
(ginger is better if you are eating this in school or at work)
Potato starch half a cup
 
Instructions:
Marinate the chicken in soya sauce, mirin and garlic or ginger and leave it for a while.
Coat the marinated chicken with potato starch and deep fry them with good quality oil.

Chicken foccacia: Easy Parmesan Herb Chicken Recipe



Well, it looks like lunch.
But no. It was my dinner last night.


*Chicken foccacia
*Baked croquettes
*Semi-dried tomatos
*Carrot and fruit juice





My mum bakes delicious bread at home.



I have worked in both Japanese and Australian bakeries before,
but my mun's bread has always been the best.

I want to be able to bake bread like my mum someday,
but till then, I need to buy some cheap bread from supermarket... :(


Recently, I've been buying this mediterranean foccacia bread from fair price finest
(Singaporean supermarket).

It's got bits of dried tomatoes inside and  yes, it is quite good for the price.
Yes very fair price...


Anyway, so what I did was.. I toasted the mediterranean foccacias in my new toaster,
made parmesan herb chicken patties and semi-dried tomatoes.
Stuffed them in the toasted foccacia bread with sliced cucumbers, lettuce and mayonaise.

Cheap bread turned into a delicious sandwich! 


Parmesan Herb Chicken Pattie Recipe



Ingredients

*Minced chicken 200g
*Dried Italian herbs 1 table spoon
*Parmesan Cheese 1 table spoon
*Breadcrumbs 1 table spoon


Instructions
1. Put all the ingredients in a bowl and mix them well. Then make round, flat shapes.
2. Heat up a pan with some olive oil and cook the patties.

chicken catchatori and corn soup lunch

Today's lunch




Chicken Catchatori recipe is here -> Creamy tomato chicken
In the recipe, I use chicken legs, but I used chicken thigh this time.

 I couldn't decide whether to eat chicken catchatori with rice, pasta or potatoes till the last minute!
So I cooked everything!
I picked potatoes at the end!
Boiled potatoes with mozzarella cheese and herbs.

And corn soup! I put extra milk this time.
So the soup looks whiter than the one in the recipe.

Delicious "Breakfast stack" recipe

My very first attempt in making my favourite Melbourne breakfast !!




Today's brunch

"Breakfast stack"



My most favourite breakfast is a dish called "breakfast stack" in one of the cafes in Melb.
I used to eat this often when I lived in Melbourne.
But since I moved to Singapore last year, I hadn't been able to eat it for a long time.
I missed this dish so much.

So, when I went back to Melbourne for a holiday about a week ago, I thought I must eat this again.
And I did! It was as awesome as last time I ate it.


After flying back to Singapore, I missed this dish again straight away.
Then I thought,

hey why don't I try making it myself at home?




Well, the display of the dish is not as good as the real "breakfast stack" as I failed to make them stack nicely, and also my very fist attempt in making poached egg failed.


But hey!

It tasted as delicious as the one I ate in Melbourne!:D
I think, the secret is the Halloumi cheese and the tomato sauce around the stack!

I stack a potato patty, few slices of grilled Halloumi cheese, chicken& cheese sausages, grilled tomatoes and a poached egg.



For the tomato sauce, I used tomatoes, onions, Italian herbs, Lemon & Garlic marinate sauce (from Marks&Spencer) and tomato ketchup.



It takes time- but it's delicious and cost saving if you cook it at home!
Also you can eat it anytime & anywhere you want! - Well, what I meant by "Anywhere" is countries like whether you are in Australia or Singapore or in Japan, you can have this delicious breakfast!)





Recipe


Ingredients

*potatoes 2
*sweet honey mini tomatoes 5 or so
*your choice of sausages/bacons 2
*Halloumi cheese 2 slices
*egg 1
*Butter/olive oil 1 tea spoon
*Italian herbs- just a sprinkle

Ingredients for the sauce
*sweet honey mini tomatoes 5 or so
*Onion1/8
*Lemon and Gralic marinate sauce 3 table spoons
*Tomato ketchup 4 table spoons
*Italian herbs - just a sprinkle


Instructions

1. Peel the potato skin, cut them into half, boil them till they become soft enough to mash.
2. Meanwhile, cut the tomatoes into half (Cut all the tomatoes, both for the stack and the sauce together, so that it will be easier later on).
3. Once the potatoes are boiled, take them out of the water and mash! Once mashed, make a patty shape.
4. Heat up a pan with either butter or olive oil. place the patty and half of the chopped tomatoes. Sprinkle the herbs on top of the tomatoes, leave them for a while then, flip them over before they get burnt. Once nicely cooked, take them out of the pan, and start stacking. A potato patty, then tomatoes.
5. On the same pan, cook the cheese and sausages. (Cheese cooks faster than sausages)
Once done, stack them on top of the tomatoes.
6. Poaching the egg! - I'm still not sure how to do it well, but boil the water in a pot, either gently crack the egg into the water, or crack the egg on a bowl first and slowly smoothly slip the egg into the water.
Once done, place the egg on top of the breakfast stack!


7. Now, the sauce! sauce is easy.
Mince the onion. put all the ingredients in a pan. bring it to boil.

Kimchi fried rice recipe


Ingredients:

*Kimchi -1cup
*Rice (better to use left over rice)- 3 bowls
*Japanese/Korean sweet BBQ sauce -1table spoon
*Mirin (Japanese sweet sake sauce) -1 table spoon
*Long beans 6-10 pieces (you can use your favourite veggies here, carrots are also good )
*Onion -1/4
*Minced pork-some (2 table spoons will do but if you want, you can put more!)
*Garlic - 1 piece/ 1 tea spoon if you are using a pre-minced jar of garlic
*Sesame oil- better for smell& flavour but if you don't have it, ordinary oil will do.


Instructions:
1. Slice the onion into thin slices, cut the long beans into small bits, mince the garlic.

2. Heat up a pan with some sesame oil , cook the ingredients you chopped in instruction #1. After they are roughly cooked, add pork.

3. Add kimchi and rice. Use strong fire and keep stirring. Add the BBQ sauce and Mirin at the end.

Serve with sunny side egg in top!

It's a quick delicious meal!

Mabo fried rice lunch





Menu:

*Mabo fried rice
*Miso soup
*Boiled sweet pumpkin

Mabo fried rice recipe


An easy & tasty lunch when you have leftover mabo-nasu from a night before

I still have some mabo-nasu left, so I'm planning to eat it with udon tomorrow.
It is also gonna be nice.



Ingredients:

*mabo nasu 1 small bowl
*rice 2 bowls
*soya sauce 2 table spoons
*sesame oil some
*chill (as you like)


Instructions:

1. heat up a pan with some sesame oil. cook the rice, then add mabo nasu.
2. add soya sauce and chill& sesame oil as you like.

Bolognese spaghetti

I went to medi-ya, the Japanese supermarket in Clarke quay.

I have been craving for hiyashi-chuka, a cold noodle dish. I was just gonna get that, but ended up buying a lot of other things...
so heavy...


As soon as I got home, I started cooking! I cooked a lot of things but I realised I hadn't finished the pasta sauce I made few days ago.
So after all the cooking, my dinner became bolognese spaghetti .


Bolognese sauce recipe serves 2

Ingredients:
Pork mince 100g
Canned Tomato 1
Onion 1/2
Garlic some
Cheese some
Dried herbs 1 tea spoon



Instructions:
1. Mince the onion&garlic. Heat up a pan with some olive oil, cook the onion &garlic.

2. Add the pork mince. Once the pork is cooked, add the canned tomato and herbs. If too thick, add some water.

3. serve on spaghetti, add some cheese on top while it's still hot!


If you make extra, you can use it to make lasagna on the next day!

Ingredients
*Chicken Thigh 200g
*Soya sauce 2 table spoons
*Marmalade jam 2 table spoons


Instructions
1. Cut the chicken into eatable sizes, marinate it with soya sauce and marmalade jam. Leave them for 5 to 10 mins.

2. Cook them in a pan/pot.



You might find it weird to marinate chicken with marmalade jam and soya sauce.
But trust me, marmalade jam goes very well with soya sauce!

Ingredients

*Chicken thigh 200g
*Soya sauce 4 table spoons
*Mirin 3 table spoons
*Minced garlic 1 tea spoon


Instructions

1. Cut the chicken into small pieces, put all the ingredients into a bowl. Marinate the chicken for 5 to 10 mins.
(Alternatively, you can marinate the chicken in the morning and cook it for lunch or dinner)

2. Heat up a pan, cook the chicken together with the sauce.

Hayashi rice

Hayashi rice


Hayashi rice is a very tasty dish.
It looks similar to Japanese curry, but it tastes completely different.
It tastes like... butter chicken without spices,
Japanese cream stew without cream.
It's sweet.
Once you have a sip, you won't be able to stop yourself.
It is a dangerous dish, indeed.

It's worth trying!






It is not really a recipe...

Ingredients
*Box of Hayashi rice blocks
*Minced/thin sliced pork 300g
*Onion 1


Hayashi rice blocks are similar to Japanese curry blocks.
You can get it from Asian groceries.


Instructions

1. Cut the onion into thin slices.
2. Heat up a pot with some oil. Cook the pork and onion.
3. Add 500ml of water. Bring it to boil.
4. Take out scums.
5. Once onions become soft, add half of the Hayashi rice blocks. Cook for another 10 mins.

Ready to serve!







I love Hayashi rice.
I had it with some pickled cabbage!

Ingredients


  • Chicken thigh fillet 200g

  • Onion 1

  • Japanese soup stock (fish/seaweed) 1 tea spoon

  • Soya sauce 3 table spoons

  • Mirin 2 table spoons

  • Egg1

  • Water



Instructions



  1. Cut the chicken into small pieces, onion into thin slices.

  2. Heat up a pot with some oil, cook the onion. Then add the chicken and water. You have to pour water till it covers all the ingredients.

  3. Add the rest of the ingredients except for the egg. Close the lid and cook them for 5 mins. take out scums. Keep it boiling.

  4. Break the egg in a bowl and stir it well. Pour it into the boiling pot.

  5. Leave the pot for 10 seconds, let the egg cook. Serve it on rice with the soup

Ingredients

  • chicken thigh fillets 300g
(Sauce ingredients)
  • Onion (large) 1
  • Chicken powder 1 tea spoon
  • Sesame oil 2 table spoon
  • Salt 1 tea spoon
  • Pepper some
  • Vinegar 2 table spoons

Instructions
  1. cut the chicken thigh fillets into eatable sizes. Cook them in a pan with some oil.
  2. Put all the sauce ingredients in a bowl and mix them well. pour them on top of the chicken.
  3. Close the lid and wait for about 20 seconds till the onion becomes soft.

so I cooked kimchi rice in soup for lunch.

  • kimchi 1 cup
  • soya beans sprouts 1/2 package
  • bacons 2 slices
  • soya sauce 1 table spoon
  • mirin 3 table spoons
  • chicken powder 1 table spoon
  • water 3 cup
  • rice 2 cups
  • egg1


Instructions


  1. cut the bacons into eatable sizes, wash soya bean sprouts.
  2. heat up a pot with some oil, cook the bacons and soya bean sprouts.
  3. add the rest of the ingredients (except for the egg) to the pot.
  4. Take out scums. just before you stop the fire, pour stired egg in to the pot. Stir gently.

Delicous Pork Recipe










Ingredients


  • Minced pork 250g
  • Soya sauce 1 table spoon
  • Mirin 1 table spoon
  • 豆板醤To-ban jyan (Chinese spice) 1 table spoon
  • Chicken soup stock 1 tea spoon
  • Garlic 1 piece
  • Onion 1/2




Instructions


  1. Chop the garlic and the onion into small pieces.
  2. Heat up a pan with some oil, cook the garlic, onion and To-ban jyan. Then, add the meat.
  3. Pour the rest of the ingredients. Stir well.
